Yummy Bran Muffins...


This is one of my favorite treats, and it's pretty healthy. I love to have them available anytime. Keep them in the freezer and warm up in the microwave for 45 seconds for a delicious snack.


Ingredients:

3 eggs

1/2 cup vegetable oil

1/2 cup honey

3 1/2 cups bran

1 1/2 cups milk

2 1/4 cup flour (I usually use whole wheat)

1 tsp. cinnamon

2 tsp. baking soda

1 tsp. vanilla

1 cup dried cranberries

2 smashed bananas (optional)


Directions: (if you're using the bananas, smash those up first and mix them with the "wet" ingredients)Mix wet ingredients together in large mixing bowl (by hand or electric mixer).Bit by bit, add the dry ingredients to the wet mixture.Batter will be a little "wet"...add the cranberries, and mix them in. Grease a muffin pan. Fill each cup 3/4 full with batter. Bake at 350 degrees for 25-30 minutes.


*I also like to substitute the cranberries with chocolate chips, yum!
